Beetroot juice, banana, coconut and chia pudding breakfast smoothie!
A tasty way to start the day! Beetroot juice taste horrible, well I think so anyway! but it’s a great way for runners to get my dietary nitrates which have been found to have a positive impact on performance. This smoothie packs in plenty of nitrates but the other flavours cleverly sweeten the taste of the beetroot juice!
Beetroot Juice concentrate – 2 Tablespoons
Chia Bia Whole chia seeds 15g
Honey – 1 tea spoon
Coconut Milk (or other diary free milk) 200ml
This is really easy to make but takes a little preparation!
To make the Chia pudding, soak 15g of whole chia seeds in the coconut milk overnight in the fridge.
In the morning combine all the ingredients in a blender and blitz until smooth! – You may want to add crushed ice for a thicker consistency.
